Wanting to try my hand at making Beef Jerky. Anyone have a "secret" to making excellent jerky? What cuts of meat are the best? Any suggestions on a marnade or special curing techniques? Should I buy a dehydrator or use the oven?

I use hind quarters sliced thin or on a slicer.

I use a dehydrator

I use a marinade and that is it. In the past I have used a store bought cure.
Soy Sauce, Worchester Sauce, Garlic Powder, Liquid Smoke, McCormick Pepper Season All.
for spice I may add crushed red pepper.
for sweatness I may add brown sugar.
