Rhubarb Upside-down Cake

If you love rhubarb this is your recipe. It bakes up in no time and makes it's own crust. It is a great cake to let the kids make. P.S. If you are on a diet stop and back away from the stove.

Ingredients:

• 1 box yellow cake mix

• 1 cup water

• 1/3 cup cooking oil

• 3 eggs

• 2 to 3 cups rhubarb sliced thin

• 1 1/2 cup sugar

• 1 pint of whipping cream

Cooking Directions:

Mix up your yellow cake mix with one cup of water, 1/3 cup of cooking oil, and 3 eggs. Mix for a good minute or until real smooth. Pour into 9 X 13 pan sprayed with non-stick baking spray. Sprinkle the sliced rhubarb on top of the cake mix until cake mix is completely covered all over with the little pieces. Sprinkle your sugar on top the rhubarb then cover it all with your heavy whipping cream. Bake in a oven at 350 for about 45 minutes or until you can poke a toothpick in the cake and it comes out dry. Serve warm with whip cream on top. Watch it disappear!
